This is my first time ever doing this so I just need a pretty in depth explanation of how to do this. I have already disconnected the negative and put my emergency brake down. I have taken out the factory stereo. I drive a VW Jetta, and with VW's you have to buy a interface when you replace the factory stereo. Some people say you don't have to match up wires when you have a wiring harness. Is that true? I have a atenna adapter, but I don't know where to put that? Do I need crimp connectors and crimper or can I just wire them around each other and electric tape? If I have a wiring harness do I have to match color wires or do you always have to do that??
Don't use electrical tape. Excessive heat behind the dash will degrade the adhesive and vibration will cause the connections come loose and/or short out. Solder and heat shrink makes the best connections. Inline or butt crimp splices are usually adequate if they are the appropriate size and correctly crimped. Even "twist-on" wire nuts are preferable to electrical tape.
Whether you use a wiring harness or not, you still have to match up the wires. But with a wiring harness, you can splice them together on your workbench (or kitchen table) where there's adequate light and enough room to work. And usually, it's just a color-for-color match.
If the antenna connection is the same on both the stock radio and your new aftermarket unit, you probably do not need an adapter. If they are different, your adapter should have a female connector that matches the vehicle antenna cable and a male connector that plugs into the new head unit.
