there's no reason such a set up won't work but you would need to do it right. the switch would have to be one rated for at least the size of the fuses or larger. the wire should be #4 as least and there should be a fuse at both batteries to protect against a short in the wire. a rated relay may be cheaper than a switch and if the batteries are located so that the wiring can be installed to prevent shorts you could forget the fuses as well. battery switches are available at most marine stores and start about $35 . a constant duty relay is about 1/2 that.
